Boil the eggs in enough water for about 5 or 6 minutes. Remove them from the hot water and cool in cold water. Once cooled, peel them, cut in half, remove the yolks, and set aside.

In a small pot, cook the peas with a little water, a teaspoon of salt, and a teaspoon of sugar until soft. You can use canned peas, but fresh ones taste better.

Drain the cans of tuna and place in a bowl. Add the onion, cooled peas, chopped chili, yolks, chopped cilantro or parsley, and mayonnaise. Mix everything well and season with salt and pepper to taste. Fill the egg whites with the mixture and serve on a bed of grated carrot and lettuce.

You can serve with crackers, tostadas, or, as we Mexicans prefer, with tortillas for the best taste 😊😋😋
