Ingredients

4 servings
  1. 1 tbsp.olive oil
  2. 1/2yellow onion, finely diced
  3. 3 clovesgarlic, minced
  4. 3/4 cuporzo pasta, uncooked
  5. 1 cupunsalted chicken broth
  6. 1 can (15 oz.)fire roasted diced tomatoes, undrained
  7. 1/2 tsp.each Italian seasoning, dried basil, salt
  8. 1/4 tsp.pepper
  9. 2 cupsshredded chicken
  10. 3 cupsspinach, roughly chopped
  11. Freshly grated parmesan cheese, for serving

Cooking Instructions

    In a large, deep skillet with a tight fitting lid, heat the oil over medium heat. Once its hot, add the onion. Cook, stirring often until it's translucent, about 5-7 minutes. Then stir in the garlic and cook another minute or so more, until it's fragrant. Increase the heat to med-high and add the orzo to the pan and let that toast a bit, stirring often.

    Stir in the broth, diced tomatoes, chicken and seasonings. Let it come up to a low boil. Once starting to boil, cover with a lid and reduce the heat to med-low. Let this simmer covered for 12-15 minutes, or until the liquid has absorbed, stirring often. In the last few minutes of cook time, stir in the chopped spinach. Then serve with some fresh parmesan on top.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
