Creamy Parmesan Orzo

This makes such a yummy, creamy side dish. Or you could add some protein and veggies into it and make it a main meal. The orzo cooks very quickly, making this a very fast side item, perfect for busy weeknights...though it is a little on the decadent side, so maybe not as an everyday thing. Ingredients

6-8 servings
  1. 2 tbsp.olive oil
  2. 2 tbsp.unsalted butter
  3. 1/2small yellow onion, diced finely
  4. 4 clovesgarlic, minced
  5. 2 cupsorzo pasta, uncooked
  6. 2 cupschicken broth, low sodium recommended
  7. 2 cupshalf & half
  8. 1 cupfreshly shredded parmesan cheese
  9. to tastesalt & pepper, dried parsley
  10. 2 cupsroughly chopped spinach (optional)

Steps

    In a large pot with a tight fitting lid, heat the olive oil and butter over med-high heat. Once the butter has melted, add the onion to the pot and cook, stirring often, until translucent, about 3-5 minutes. Stir in the garlic and cook until fragrant, just another minute or so.

    Stir in the orzo and let it toast for a couple of minutes. Increase the heat to high and stir in the broth and half & half. Once it reaches a boil, cover the pot with a lid and reduce the heat to med-low. Let this simmer for 5-7 minutes, stirring occasionally, until the liquid has mostly been absorbed by the orzo.

    Remove the pot from the heat and immediately stir in the parmesan cheese (and the spinach if using). Then season to taste and serve immediately. Refrigerate any leftovers.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
