  • 2 tbsblack peppercorns
  • 2 tbscoriander seeds
  • 2 tbsAllspice Berries
  • 2small Cinnamon sticks crushed
  • 2 tbswhole cloves
  • 2 tbsmustard seeds
  • 2 tbshot pepper flakes
  • 1 tbsground mace
  • 2-4Bay leaves crumbled
  • 1 tbsground ginger

  1. 1

    Combine peppercorns, mustard seeds and coriander seeds in a small dry pan.

  2. 2

    Place over medium heat and stir until fragrant, being careful not to burn them; keep lid handy in case seeds pop.

  3. 3

    Crack peppercorns and seeds in mortar and pestle or with the side of a knife on cutting board.

  4. 4

    Combine with other spices, mix. Store in tightly sealed plastic or glass container.
