My boyfriend and I are trying to lose weight and we got bored of just having plain food all the time. This is such a quick and easy meal and we both think it tastes good too!

Mix the soy sauce and the garlic in a mixing bowl and add the beef. Leave to marinate for as long as you wish.

Cook the rice according to the packet instructions but add the stock cube to the boiling water. While the rice is cooking, spray the frying pan with frylight or coconut oil, and sautè the peppers and onions for 3-4 minutes and add the beef mixture.

Once the beef is cooked through, the rice should be cooked and the water absorbed. Mix the beef mixture into the rice and serve.
