Nankhatais are everyone's favorite. I have twisted it a bit by adding lemon zest and made it tangy.. Do try this amazing combination
Steps

Take all the flours add the sugar. add the zest of 1 lemon. Add the cardamon powder

Add lemon juice and the ghee. Make a soft dough. Add more ghee if needed.

Make small pedas and make indentation on them and place some sliced pistachios

Place the cookies in the refrigerator for 30 mins. Preheat the oven at 165 The Celsius and bake the Nankhatais for 15 to 20 mins.

The bottom of the cookies will turn golden. We need this colour and texture. Do not bake further. The cookies will have some beautiful cracks too.
