Ingredients

6 servings
  • 2 (10 oz)cans of chicken breast
  • 1 (28 oz)enchilada spicy sauce
  • 1 canblack beans
  • 1 cansweet corn
  • 1 tspminced garlic
  • 1 tbschopped onions
  • 1 tbstaco seasoning
  • 1 candiced tomatoes with green chilies
  • Flour tortillas
  • Shredded cheese

Steps

  1. 1

    Warm 4oz of enchilada sauce while adding chicken, beans (as desired), corn (as desired), and the diced tomatoes.

  2. 2

    Let simmer for 10-15 minutes or until well blended. Preheat the oven on 400.

  3. 3

    Pour half of the remaining enchilada sauce in a baking dish.Fill flour shell with desired amout of meat. Wrap tightly and line the baking dish. After all shell are wrapped pour the remaining sause over the enchiladas and spread shredded cheese over the dish and bake for 45 minutes. Use sour cream if desired and serve..
