To use up leftover Easter chocolate, I made this delicious Torta Caprese—moist on the inside and made without any flour!

Melt the butter and chocolate together.

In a separate bowl, beat the 5 egg yolks with the sugar, then add the melted chocolate and butter mixture.

In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the chocolate mixture a little at a time.

Finely grind the almonds into almond flour, then gently fold them into the batter along with the vanilla.

Pour the batter into a 9-inch (24 cm) cake pan and bake at 350°F (180°C) for 25 minutes.
