I was at a market, saw a fresh salmon head for $2.75. Can’t pass at that price. 😊
Cooking Instructions

Clean fish head. Cut into medium size pieces. Sprinkle salt and pepper. Put fish on something with holes in the bottom to drain the water coming out from the fish. Set aside for 1 hour in the fridge.

After 1 hour. Place cheese cloth on a plate, place fish piece by piece, do not cover. Put back in the fridge for about 1 hour.

After 1 hour, turn over the fish and put back in the fridge. This process is to dry the fish a little before frying. That will make it crunchier.

Coat fish with flour.

Put oil in a frying pan or wok on medium heat. Fry fish for 7 minutes on each side. Remove fish. Turn up heat little higher, put fish back in and fry for 10 minutes on each sides.

Enjoy just like that or with a cold beer.

At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight. There was an element missing, so I found some Greek yogurt in the fridge and added dill, but it was lacking. Tried salt and pepper. There was a definite improvement, but not quite there. A touch of horseradish sealed the deal. It made sense to use the, "tomato story," bowl I got at Daiso, a Japanese dollar store near my house. Pretty satisfied with the results overall. My mother used to make this even when the word "meunière" wasn't that well known. She used to call it "Pan-fried salmon with butter".Dust the salmon with flour just before cooking it, wiping off any surface moisture beforehand. Pan fry the salmon over low-medium heat slowly until crispy. Wipe out any excess oil in the frying pan before adding the butter at the end. For 2 servings. Recipe by meg115 cookpad.japan
