Firstly in a mixer jar add roughly diced onion, tomato, ginger and garlic and make a fine paste

Heat oil in a pan and fry the urad dal vadi till it is slightly golden take them out on a plate

Now in the same hot oil add in the mustard and cumin seeds let them crackle for 10 seconds then add in the prepared paste add little salt cook for 5 minutes on high flame then add all the masala powder except garam masala cook on high flame for 5 minutes then cook it on medium flame till oil separates making sure that the masala does not sticks to the bottom of the pan

Now add in water as per the desired consistency then add peeled and diced potato and the fried vadi add salt to taste cover and cook till the potatoes get cooked remove the lid add garam masala and coriander leaves

Serve the badi sabji hot with roti or rice
