Simple to make yet so delicious to eat, carrot cake with Malai.
Steps

In a mixer blender,add egg yolks,fresh Malai and sugar and blend it well till sugar dissolves.

Take it out in a mixing bowl and add vanilla essence to it.

Sieve the flour,baking soda,baking powder and salt in this mix and mix it well till no lumps.

Using a hand blender,beat the egg whites till soft peaks and add these to the above mix too and mix well till Incorporated.

Add in the grated carrots and mix them well too.

Pout the cake batter in a cake tin dusted and lined with parchment paper.

Bake in a preheated oven at 180 degree Celsius for 25-30 minutes till a skewer comes out clean. Let the cake cool then demould,cut and serve with syrups of your choice and some sprinkles.
