Chop the onion, peel the carrots and cut them into small pieces, and grate the tomatoes.

In a pot, add olive oil and brown the beef. Season with salt to taste and stir.

Once the beef is browned, remove it from the pot and set aside.

In the same pot, sauté the onion. Once softened, add the chopped carrots and cook for about 5 minutes.

After the carrots are cooked, add the peas. Stir in 1 tablespoon of flour and mix well.

Add the grated tomatoes, mix, and cook for 3-4 minutes. After 3-4 minutes, pour in the red wine, mix well, and let it cook for 2 minutes to let the alcohol evaporate.

Return the reserved beef to the pot, mix well, and add 2 cups of water (about 480 ml).

Once the water is added, season with a pinch of black pepper and nutmeg (optional), and adjust the salt to taste before covering.

Simmer over medium heat until the meat is tender and soft (about 1 hour).

Serve as is. I like to enjoy it with some French fries or a bit of mashed potatoes.
