Ingredients

  • 1large yellow onion (sliced)
  • 2pasillas peppers (sliced)
  • 6mini bell peppers (sliced)
  • 2 cupssliced zucchini
  • 2 cupssliced baby portabello mushrooms
  • Member's Mark chicken sausage with spinach and asiago (sliced)
  • 2 TBSolive oil
  • 1/2 tspsalt
  • 1/2 tspcumin
  • 1/2 tspChipotle seasoning
  • 1/2 tspsmoked paprika

Steps

    Prep veggies

  2. 2

    In a pot or Dutch oven, add in the olive oil and seasonings

  3. 3

    Once hot add in onions and peppers. Cook until they start to sweat.

  4. 4

    Then add in zucchini and sausage. Cook for another 5-10 minutes, then add in the mushrooms. Cook for another 10 minutes or so.
