Exam Success Cheese Fried Pork Cutlet Sandwich (Oven Version)

The pronunciation of 'tonkatsu' is similar to 'katsu' (victory) in Japanese, so many students in Japan eat tonkatsu before exams to wish for success. It's tough to deep-fry early in the morning, but you can make crispy fried pork cutlets using the oven!

Steps
- 1
Marinate the pork chops overnight with salt, pepper, and your favorite spices.
- 2
Mix about 1/2 cup (50 grams) of breadcrumbs with 2 tablespoons of oil. Microwave at 600W for about 1 minute, stir, then microwave for another 40 seconds, stir again, and continue microwaving in 30-second intervals until the breadcrumbs are golden brown.
- 3
Preheat the oven to 410°F (210°C).
- 4
Coat the pork chops in flour, then egg, and finally the breadcrumb mixture from step 2. Place on a baking rack (brush the rack with oil to prevent sticking) and bake for 16-20 minutes.
- 5
Toast the bread for 3-4 minutes, spread with butter, and layer with toast, fried egg (seasoned with salt and pepper), tomato, another slice of toast, fried pork cutlet, tonkatsu sauce, lettuce (or shredded cabbage), and a final slice of toast. Cut in half.
