Ingredients

  1. 1 cfinely chopped onion
  2. 4-5medium carrots, peeled and chopped
  3. 2 tbspvegetable oil
  4. 1/2 clentils, pre-soaked
  5. 2medium sweet potatoes, peeled and chopped
  6. 2 cchicken stock

Cooking Instructions

  1. 1

    Salute the onions and carrot in vegetable oil for about 5 minutes or until softened.

  2. 2

    Add lentils, sweet potatoes, and chicken stock.

  3. 3

    Bring to a boil, turn down heat and simmer, covered for 20 minutes.

  4. 4

    All done!
