Sieve maida with baking powder & baking soda and keep aside.

In a heavy bottom pan take milk, butter and sugar and warm the milk till butter melts. (Do not over heat the milk)

Now beat the warm milk mix for 20 seconds so as to remove any lumps of butter, then slowly add the sieved flour and vanilla essence and again beat well into a smooth lump free batter.

Rest the batter for 10-15 minutes before making the pancakes.

To make the pancakes heat a Friday, once hot brush some butter on it, pour 1 ladle of batter on it (keep the pancakes a little thick) don't spread the batter much, once you see bubbles appearing on the top side flip the pancakes and cook them till golden brown.

Serve it with maple syrup and any fresh fruit of your choice. Or you can even spread Nutella on it.
