This is very instant idli with premix. So spongy and soft. My favourite south Indian food.

This is very instant idli with premix. So spongy and soft. My favourite south Indian food.
Steps

First take a bowl and add idli premix, salt and curd. Mix well.

Add little by little water in it and make lump free better.

Other side take idli cooker and add water and give it a boil in water.

Grease idli molds with oil. Set aside.

Now take batter and when water is boil enough then add eno in the batter and add 1 tbsp water on it. Mix very fast and also well.

Pour the batter in all idli molds and steam idli for 15 minutes.

After 15 minutes check with knife, if it comes out clean then idli is perfectly ready.

Remove from the molds.

Serve with sambhar or coconut chutney. It comes out really soo spongy. Do try it.
