American Pancakes
The use of essence in the recipe.
Steps

Use a heavy non-stick for this recipe

Beat the eggs, corn oil and sugar in a bowl and beat thoroughly.

Add the flour and whisk until fully mixed. It should be thick and smooth.

Heat the pan on medium heat. NOTE: This recipe does not need additional oil or fat if using a heavy non stick pan.

Pour the thick pancake mix at the centre of the pan and allow it to spread evenly to the edge of the pan.

Cook for approximately 2 minutes. The upper side will look dry and the underside and edges will have browned.

At this point, turn to cool the second side.

While still hot garnish with chocolate shaving or wait for it to cool and use honey or a syrup e.g. maple, strawberry or chocolate.
