It is one of the mandatory dishes in Estonian weddings, birthdays, festivals and other occasions - which shows the cultural importance of Kringle .

Ingredients

  1. 275 gmsbread flour or all purpose flour
  2. 180 mlmilk
  3. 30 gmsunsalted butter
  4. 15 gmsactive dry yeast
  5. 1egg yolk
  6. 1 tbspsugar
  7. 1/2 tspsalt
  8. for filling:
  9. 1/4 cupchocolate spread or melted chocolate
  10. 1/4finely chopped mixed nuts
  11. forcoating:
  12. 2 tbspunsalted butter (melted)
  13. 1 tbspsugar
  14. 2 tspcinnamon powder
  15. 1/2 tspnutmeg powder

Cooking Instructions

    Mix active dry yeast and sugar. Add warm milk into it and allow the yeast to bloom. When the yeast mixture starts to bubble add melted butter and egg yolk into it and combine well.

    Sieve in flour and salt into a large bowl and add the well combined wet ingredients into it. Mix it with a spatula combine by gently kneading.

    Dust a flat surface with flour and knead the dough for 10 minutes. Transfer it into a bowl and cover it with kitchen towel and let it double the size. This will take an hour.

    After an hour, the dough will double in it's size. Now knead the dough again for a couple of minutes.

    Roll the dough into a rectangle shape (approximately 22 x 16), using a rolling pin and spread chocolate spread or melted chocolate (should not be hot) on it, evenly. (Don’t spread the filling to the edges,leave a 1/2 inch on the sides). Sprinkle finely chopped roasted nuts on the chocolate spread. (I used almonds, cashews,pistachios and walnuts)

    Then roll it tight like a log. And cut it lengthwise into two, leaving 1 inch portion uncut on one end.

    Start braiding the bread, by keeping the layered portion Open on the top. Pinch the ends together to form a ring shape. Sprinkle more nuts, if needed. And let it sit for 15-20 minutes for a second rise.

    Preparing the coating : mix together the melted butter, cinnamon and nutmeg. Brush it over the prepared bread ring.

    Pre-heat oven at 400F. Bake for 20 minutes or until golden brown.

    Take it out of the oven. Let it cool and enjoy !
