First, grate the onions and squeeze out the juice. Set the onion juice aside, and add a tablespoon of tomato paste and some salt to it.

Add the grated onions, parsley, salt, and black pepper to the ground beef. Mix everything together very well.

Shape the kofta onto a knife sharpening rod or a skewer. While shaping, dip your hands in the onion juice mixture for extra flavor and aroma.

Make sure the ground beef has some fat in it, as the fat keeps the kofta tender. Bake the kofta in the oven at medium heat until fully cooked and nicely browned from the fat. Enjoy!

Serve with onion salad: slice an onion, add chopped parsley, squeeze in lemon juice, sprinkle with salt and sumac.
