Ingredients

Makes 20 to 25 fritters
  • 2zucchini
  • 1 cupall-purpose flour (about 150 grams)
  • 7 tablespoonswarm water (about 100 grams)
  • 2small eggs
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoongrated Parmesan or Grana Padano cheese
  • 1 sliceprovolone cheese
  • 4 cupsvegetable oil for frying (about 1 liter)

Steps

  1. 1

    Wash, dry, and grate the zucchini. Cut the provolone into very small cubes. Set the zucchini and provolone aside.

  2. 2

    In a bowl, mix the flour, Parmesan, eggs, water, pepper, and salt. Stir well to make a smooth, lump-free batter.

  3. 3

    Add the grated zucchini and provolone to the batter. Mix well.

  4. 4

    Heat the oil in a skillet. When the oil is hot, drop spoonfuls of the zucchini batter into the pan. Fry the fritters, then place them on paper towels to remove excess oil. Serve warm.
