Tasty and flavorful, these make a great appetizer or a delicious side dish.

Wash, dry, and grate the zucchini. Cut the provolone into very small cubes. Set the zucchini and provolone aside.

In a bowl, mix the flour, Parmesan, eggs, water, pepper, and salt. Stir well to make a smooth, lump-free batter.

Add the grated zucchini and provolone to the batter. Mix well.

Heat the oil in a skillet. When the oil is hot, drop spoonfuls of the zucchini batter into the pan. Fry the fritters, then place them on paper towels to remove excess oil. Serve warm.
