Arroz Chaufa | Fried Rice

This is one of many delicious mashups that the Peruvian cuisine has. As other merged dishes with French and Italian cuisine, Arroz Chaufa (fried rice) is a fused recipe, brought by Chinese people who migrated to Peru in 1960. This fried rice differs a lot from the ones found in US or even China due to the preparation. Arroz Chaufa is a great way to use leftover rice (optional), and it is a one-dish meal. Steps

30 mins
  1. 1

Place the rice and water into a rice cooker. Turn the cooker on, and let it cook for 20mins or until the rice is done.

  2. 2

While the rice is cooking, place a wok or frying pan over high heat, pour vegetable oil, and heat it up until ripples. Pour in the garlic, and chicken strips, adding a pinch of salt and pepper. Sauté them for 1min, and add the eggs, stirring them altogether.

  3. 3

Add into the wok the sesame oil, sugar, and rice from the cooker. Cook them until dry and crispy, sugar will help to make the rice crispier. Pour in the peppers, scallions, soy sauce, and salt to taste. Sauté them until all are mixed, and well distributed.
