Ingredients

  1. 1 cupmushrooms
  2. 1/2red pepper
  3. 3 clovesgarlic
  4. 1white onion
  5. 2chicken breasts
  6. 1 cancrushed tomatoes 14.5 oz
  7. 1/2 cupwhite wine
  8. 1 lbfettuccine
  9. Salt
  10. Pepper
  11. Crushed red pepper
  12. Pancake mix
  13. Olive oil
  14. 1 tablespoonoregano

Cooking Instructions

    Slice red pepper thin

    Slice mushrooms

  3. 3

    Dice onion and garlic

  4. 4

    Dry the chicken breasts add salt and pepper lightly coat with pancake mix

  5. 5

    Cook pasta al dente and set aside save 1/2 cup water.

    Add olive oil to pan and cook chicken

  7. 7

    In the same pan add peppers and onions cook until soft

  8. 8

    Add the mushrooms cook for 3 minutes

  9. 9

    Add the garlic cook for 1 minute

  10. 10

    Add the white wine, reduce by half

  11. 11

    Add the can of tomatoes and water and oregano and red peppers

  12. 12

    Let simmer for 5 minutes

  13. 13

    Add the chicken and let simmer for 10 minutes

  14. 14

    Serve with Parmesan cheese
