Ingredients

  1. 2 tbspolive oil
  2. 1medium onion sliced
  3. 1medium bell pepper sliced
  4. 2 clovesgarlic mince
  5. 2 ouncecan diced tomatoes
  6. 1 tspground cumin
  7. 1 tsppaprika
  8. 1 tspcoriander
  9. Salt freshly ground black pepper
  10. 6eggs
  11. Fresh cilantro for garnish

Steps

  1. 1

    Heat oil in cast iron skillet,over medium heat

  2. 2

    Add the onions and pepper cook for about 6 minutes

  3. 3

    Add garlic stir for additional minute,became fragrant

  4. 4

    Add,cumin and paprika,salt and pepper and tomatoes bring to boil

  5. 5

    Then reduce heat low,simmer reduce until tomato sauce thickens like a stew about 10 minutes

  6. 6

    Create six small nest in stew and cracks the eggs one by one,in the skillet over tomatoes.

  7. 7

    Season with black pepper crushed and cook for 10 minutes or until eggs yolk cooked

  8. 8

    Now garnishing with coriander and green chillies. Enjoy
