First we take a frying pan and add oil in it and heat it well now add cuted onion and garlic in it now fry till golden brown than put chopped tomatoes in it add salt and chill in it now add half cut brinjal in it and then add som water in it now pan covered and after 10 mint ster in it than after 5 mints it is ready to serve.

Stuffed aubergines Stuffed aubergines
Stuffed aubergines are called Papoutsakia in Greek (small shoes). It's aubergines with meat and usually bechamel sauce on top. I skipped the bechamel and sprinkled with grated cheese. I used 3 different kinds of cheese, mozzarella, kefalograviera (like gruyere I think) and a smoked cheese that really took the recipe to the next level. Stella T
