Steps

Heat ghee oil in a pan
Add cumin seeds, crushed ginger and green chilli
Sauté well - 2
Add shallots and sauté
Add coriander powder and chilli powder, garam masala and salt - 3
Add mashed aloo and mix well
Add coriander leaves - 4
For samosa sheet
Take wheat flour, salt and ghee in a big bowl and knead into tight-dough - 5
Make balls and roll into thin sheets
Cut into rectangular shaped pieces
Cut the rectangular sheets again into strips with the help of a pizza cutter - 6
Arrange then like a woven mat of strips
Place the aloo masala on the sheet and cross the strips again on the top to look like a closed mat samosa - 7
For frying
Heat oil in. Karahi
Add the samosas and deep fry until crisp and golden - 8
Serve hot with ketchup or coriander chutney.
