Plantain fritata
Always fry on a low heat to prevent burning.
Steps

Wash and cut vegetables and set aside

Peel back of plantain and cut

Fry plantain and set aside

Stir fry your vegetables add salt and spices and turn into a bowl and allow to cool

Break and whisk eggs, add stirred fried vegetables into egg

Place a non stick pan on low heat add a little vegetable oil

Pour vegetable and egg mixture, gently place your fried plantain

Allow to cook or fry for about 5-7 minute.
