Combine the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the egg and milk, then add the dry ingredients and mix until smooth. Stir in the vanilla extract.

Pour the batter into a piping bag. Heat 2 cups of oil in a skillet. When the oil is hot, pipe the batter in a circular motion into the oil, filling the pan.

Slice strawberries, bananas, blueberries, and golden kiwi (or any fruit you like). When the funnel cake is golden brown on both sides, drain on paper towels and place on a plate. Dust with powdered sugar, arrange the fruit on top, and add whipped cream or chocolate if desired.
