Heat oil in deep pan. Keep medium flame. Now add the potatoes in the oil.don't over crowd in pan. Put in two three batches. Fry till the potatoes get cooked but Colour not changed.remove from pan on kitchen towel.

Press some paper towel to absorb extra oil.sprinkle cornflour on them.keep in refrigerator for half an hour. Fry them after half an hour. Now increase the flame on high.fry till crisp and golden brown. Remove on kitchen towel. Sprinkle salt,pepper, red chilli flakes and oregano. Serve hot with cheese sauce and tomato sauce.
