This is a delicacy of Bengal. Care should be taken that the bitter gourd and onion are fried crisp and not soggy with oil.

Slice bitter gourd finely with a slicer.Smear little salt and set aside.Slice the onion finely and smear little salt.Heat oil in a wok and fry bitter gourd in 2 batches till crisp.Drain excess oil in a strainer.

Fry onion also till crisp.Drain oil.Mix both,sprinkle red chilli powder,French fry seasoning or chaat masala and serve crispy fried bitter gourd in lunch with rice.
