To make CASTOR SUGAR • regular white granulated sugar...pulse in blender till sugar is very fine, but not powdered • To make POWDERED SUGAR • white granulated sugar...blend sugar and 1 1/2 TBLSP cornstarch on high speed till powered • To make BROWN SUGAR • white granulated sugar, 1 1/2 TBLSP molasses...mix and blend well with a fork (for dark brown sugar increase molasses to 2 1/2 TBLSP) • HEAVY CREAM substitute...*not for receipes calling for whipped cream, as this cream substitute will not whip • whole milk, 1/3 cup melted butter...pour butter into milk and stir...use in place of 1cup heavy cream *if using low fat milk, add 1TBLSP flour to mixture • EVAPORATED MILK substute • non-fat dry milk powder stired into 3/4 cup water...use in recipe that calls for evaporated milk • SWEETENED CONDENSED MILK...makes equivalent of one 14oz can • boiling hot water, 1cup non-fat dry milk powder, 2/3 cup sugar, 3 TBLSP melted butter, 1/4 TSP vanilla. Pour all ingriedents into blender, blend at high speed 1 minute or until smooth
