Ingredients

  1. 8cubed stewing beef
  2. 2 tbspflour
  3. 2 tspvegetable oil
  4. 1 1/2 cupdiced onions
  5. 2 tspchopped garlic
  6. 2 cupsliced button mushrooms
  7. 3/4 cupdiced potato
  8. 3/4 cupdiced parsnip
  9. 3/4 cupdiced sweet potato
  10. 4 cupvegetable broth
  11. 1/4 cuppearl barley
  12. 1 tbspWorcestershire sauce
  13. 1/4 cupchopped parsley

Cooking Instructions

30 mins
  1. 1

    Dust beef with flour. Add vegetable oil to large skillet and sear beef until brown. Then set aside.

    In large sauce pan create flavour base with vegetable oil, onions and garlic. Next add mushrooms. Once there is no liquid left add root vegetables, broth, barley, and beef. Simmer for 25 mins or until barley is soft.

    Add Worcestershire sauce, salt and pepper.

    Ladle into individual bowls and garnish with parsley.
