Toast moong daal till fragrant. Soak for 2 hrs. Then boil with 1/4 tsp salt till tender. Set aside. Can be done beforehand

Marinate shrimp with (red chilli, cumin, garam masala, coriander, onion, garlic, ginger) all powders. Measurements given in ingredients section. Salt according to taste. Marinate for atleast 30 mins.

Heat 3tbsp oil on high heat and chopped green onion and chopped whole red chilli for just a minute or so, just releasing the flavors. We will use this chilli oil as a topping.

In a blender add- rice flour, corn starch, cooked moong daal, coconut cream or milk, room temp. water, turmeric, salt (measurements given in ingredients section). Blend on high speed for a minute. The mix should be runny.

Heat 3tbsp oil in a pan on high heat. We will sear the marinated shrimp on high heat, 1 min/side. Shrimp wont be fully cooked in this step as it will be cooked again.

Heat Aebleskiver pan/ Chithoi Pitha mould on med heat. Put the blended mix in the molds, dont fill it all the way.

Add the seared shrimps

Add the green onion chilli mix on top of the shrimp.

Cover and cook for 6-7 minutes

Use a spoon to see if the pitha's/ cupcakes can be scooped. If you can, then its cooked.

Remove once done, garnish with your favorite herbs/ sauces. Enjoy !!
