I love anything of eggplants of any form! Ajvar is one of them. As I avoid eating canned and bottled stuff, I attempted my own Ajvar and very glad with the result 🎉🎉☺️
Tip: 20% eggplant, 80% red pepper

Cut you veggies in half,
•spray oil your tray and the veggies,
•put them upside down on the tray,
•bake them from the top of the oven in 200°c for 30 minutes (the eggplant might need 10 minutes more!) - 2
Cool down the pepper abit and then it's easy to peel the skin off. (Just pinch the skin and hold it hanging, the weight should pull down the skin)

Blend the peeled peppers and eggplant. I added a bit of vinegar at this point.

Chop up some red onions and gerlic, sauté the whole thing in olive oil with salt, pepper according to the recipe (I added red paprika and a bit of cumin powder 🤓)
Jar them up. I wish I knew how to preserve them for a long period. If you have any idea how to do that please let me know. Thank you
