This isn't traditional birria, but it has a hint of birria flavor.

Soak the chiles in hot water, remove the seeds and veins, then blend them with the tomatoes and spices.

Place the cut-up chicken in a pressure cooker and pour the strained sauce over it.

Add enough water to cover the chicken. Once the cooker reaches pressure, cook for 20 minutes.

Let the pressure release and open the cooker.

Adjust the salt to taste.

Carefully remove the bones.

The chicken should be very tender and falling apart—it's delicious.

Serve with chopped onion, lime, chile, and tortillas.
