Ingredients

  1. 3 clovesgarlic, chopped
  2. 4 1/2lbs. assorted pork pieces (ribs, loin, backbone)
  3. 1 tsporegano
  4. 1 tspbay leaf
  5. 1 tspthyme
  6. 1 tspblack pepper
  7. 1 tspchicken-flavored seasoning sauce
  8. 2 cupslard
  9. 1 1/2 cupscola
  10. 2oranges (juice and peel)
  11. 1 cupwater
  12. coarse salt
  13. if you have a copper pot, even better
  14. 20tortillas
  15. pico de gallo salsa

Cooking Instructions

    Cover the pork with garlic, herbs, and chicken-flavored seasoning sauce.

    Separately, heat the lard and fry the pork until browned.

    Add the cola, orange juice and peels, and water. Cook over heat until done, stirring constantly to prevent sticking.

    Let cook uncovered for about an hour and a half; drain the pork.
