In a mold, heat the sugar over medium-low heat until it melts and turns a dark brown color. Turn off the heat and let it cool.

Meanwhile, in a blender, combine the evaporated milk, sweetened condensed milk, eggs, and optional vanilla extract. Blend for a few seconds until mixed.

Pour the mixture into the mold with the melted sugar (metal mold). Cover the mold with a lid or aluminum foil. Place it in a larger pot for a water bath (fill with water halfway up the side of the mold). Cook on low heat for 1 hour and 15 minutes. Check by inserting a knife; if it comes out clean, it's done! Let it cool, then run a knife around the edges to loosen before unmolding. Refrigerate and enjoy when cold.
