Combine ingredients, minus belly, in a mixing bowl

Remove skin from pork belly and place in a sealable bag

Pour cure solution into bag. Seal and refrigerate for 7-14 days. Turn bag over once per day.

Smoke over applewood chips at 200 F, until internal temperature is 150 F.

Chill for 4 hours. Slice and enjoy.
