    Chop the onions and add them to a pot with garlic cloves and olive oil. Slow cook until soft

    Once the onions are soft, chop the tomatoe and add it to the pot and leave it to cook for 2-3 minutes.

    Add the carrots, chorizo pepper, pork belly and the smoke paprica. After a couple of minutes add the lentils. Stir everything and after two minutes, cover with water. Increase the temperature until water boils, then reduce to minimun heat.

    Once it has been boiling for 5-10, add the potatoes.

    Cover it and leave it boil for 30 more minutes or until lentils are soft. Add more water if requiered.

I boiled the black pudding separetelly so the lentils were very strong.
