Beef Barbacoa in Pressure Cooker

Recipe adapted from Lenny's recipe: http://www.mis-recetas.org/recetas/show/25419-barbacoa-de-res. My family likes it with broth, so I cooked it with more water and vegetables using the steam method. Same recipe—it's delicious! Thank you, Lenny.
Steps
- 1
Place a steaming rack in a pressure cooker. I use a large perforated can to raise the rack a bit higher, which helps make more broth.
- 2
Fill the pot almost halfway with water. Add the perforated can, vegetables, and spices. Place the rack and then add the beef, cut into small pieces.
- 3
Cover and cook over high heat. Once the cooker starts to whistle, cook for 45 minutes to 1 hour, depending on your pressure cooker.
