Chicken Stew
My mother's recipe. Easy with no fuss invovled.

Marinade the chicken the night before or 3-4 hours before cooking with salt, black pepper, and garlic.

To cook, heat the olive oil in a large pan and add the onion and bay leaf. Cook until softened on a medium heat.

Add the chicken, white wine, tomato paste, carrot and chilli powder.

Simmer for 25-30 minutes stirring every so often.

Check seasoning, add more water if the sauce is starting to dry.

Add the parsley or coriander just before you turn the heat off.
