Ingredients

6 servings
  • 1Whole chicken (cut into 8-10 pieces)
  • 3 clovesgarlic ( peeled and finely chopped)
  • 1 pinchsalt
  • 1/2 tspblack pepper
  • 50 mlolive oil
  • 1bay leaf
  • 1 largeonion (peeled and sliced)
  • 1 largecarrot (peeled and sliced)
  • 1 tspchilli powder
  • 100 mlwhite wine
  • 1 1/2 tbsptomato paste
  • 1 bunchparsley or coriander (optional)

Steps

  1. 1

    Marinade the chicken the night before or 3-4 hours before cooking with salt, black pepper, and garlic.

  2. 2

    To cook, heat the olive oil in a large pan and add the onion and bay leaf. Cook until softened on a medium heat.

  3. 3

    Add the chicken, white wine, tomato paste, carrot and chilli powder.

  4. 4

    Simmer for 25-30 minutes stirring every so often.

  5. 5

    Check seasoning, add more water if the sauce is starting to dry.

  6. 6

    Add the parsley or coriander just before you turn the heat off.
