As the name of the recipe indicates, this instant potato pickle is a popular and favorite of Nepalese.
As I stay in Kathmandu, seen and tasted different kinds of potato pickles. These are instant pickles and should be consumed in 2-3 days. So it is prepared is small portion or according to the family members.This recipe is a festive (Tihar in Nepali) one and mostly done in Dashain or Dussehra. Timur cultivation is indigenous to Nepal. It's hot and used as powder in many Nepali dishes including Chowmin , mo-mo , pickles.

Steps

Cut the boiled potatoes. Fry the sesame seeds till they splutter. Grid in a mixer for 2 to 3 pulses.

Take a mixing bowl. Mix rest of the ingredients except mustard oil, fenugreek seeds and water.

Heat the oil in a pan. Add the fenugreek seeds. When they start splutter, switch off the flame. Put the hot oil to the Potato mixture.

Mix well. The instant, yummy and easy "Aloo ko Achar" is ready to serve with hot Rice/ Roti.
