Wash the Choliya with fresh water. Meanwhile cut the paneer into square shape and soak them for 5 minutes in lukewarm water with some added salt to make the paneer soft. Next, take it out of the water and put it on a plate.Chop roughly onions.

Now, grind the onions,garlic,ginger to a smooth paste using a hand mixer or blender adding little water and keep aside.Heat ghee in a heavy bottom pan on low heat, add the cinnamon stick and finely chopped onions and sauté till it becomes translucent.Add the ground spice paste and saute until the raw smell of the ginger-garlic goes away. Add the finely chopped tomatoes and cook until it turns soft and mushy.

Now add the spice powders - coriander, chilli and garam masala powder and cook until the whole mix comes together and oil separates out.

Add the Choliya roast for two to three minutes.

Add two cups of water and season with salt and simmer for 15 minutes.Add paneer cubes.
Garnish with coriander leaves and switch off the flame. - 6
Serve hot.
