We are in the peak season for fava beans, and one delicious way to enjoy them is with the recipe I share below, which I learned from my mother.
Cooking Instructions

Shell the fava beans and place them in a dish. Cut the green onions into wedges, using some of the green parts.

Next, pour plenty of oil into a pot, and when it's hot, add the fava beans and onions together. Cover and let them fry, starting on high heat, then lower the heat after a few minutes. They will release a lot of juice.

Stir occasionally to prevent sticking, and halfway through cooking, add salt.

When they are almost done, uncover the pot to let some of the juice evaporate. The cooking time is approximately 45 minutes, depending on the size of the fava beans.

I recently went to a local farmer's market and acquired fresh locally grown green beans & radishes. I also recently acquired the knowledge that you can eat radish leaves! 😏 They are actually very nutritious and are similar to using spinach, kale, or any other greens. I had a few slices of ham left and figured why not throw it all together! 🤷🏻♀️👍 I accidentally used too much oil so this was a bit greasy this time but was still very yummy. It was gone before half the family could even get any and I had a few angry children that they'd missed out! 🤦🏻♀️😂 Next time I will definitely have to double the recipe for my large family! 👌 This makes a great side dish or appetizer, and even a delicious main course as well. 👏🤤 Chef Mommy Nessa -
