Greek Yogurt Flour Tortillas with Avocado and Smoked Salmon

When I saw how easy it was to make these tortillas or tacos, I was amazed and just had to try them. They’re a super quick and tasty alternative for those days when you don’t have bread or want to set a fun table, since you can make endless variations. I made them small and thin, like tapas, but you can make them larger, like fajitas—whatever you prefer!

Steps
- 1
First, prepare the tortillas. Here are the different options I used.
- 2
Mix the Greek yogurt with the flour, adding the flour gradually and mixing well. Add salt and your chosen spices.
- 3
Once mostly combined, add a teaspoon of warm water and knead well.
- 4
Add more water as needed (I used just 3 teaspoons), kneading well after each addition. You want a dough that’s easy to work with and doesn’t stick to your hands.
- 5
Let the dough rest. Meanwhile, for Option B, crush the garlic cloves in a mortar. Once finely crushed, add the fresh cilantro (3 tablespoons) and keep grinding. Finally, add the olive oil to taste and keep mixing until the sauce reaches your desired consistency. Add a squeeze of lime and salt. You can also add black pepper if you like!
- 6
For Option A: Dice the avocado and mash it with a fork. Add the finely chopped sweet onion, cilantro to taste, a squeeze of lime, and salt. I also add a little olive oil.
- 7
Shape the dough into balls, then flatten them with a rolling pin, glass, or plate to your preferred size and thickness.
- 8
Spread a little olive oil in a skillet, then cook the tortillas for a couple of minutes on each side, depending on how toasted you want them.
- 9
Serve the tortillas however you like—either with the garlic and cilantro sauce or with the avocado and smoked salmon.
- 10
For the salmon ones, I like to add a drop of spicy oil. Enjoy!
