Scalloped Potatoes with a twist

So I looked through here for a scalloped potatoe recipie and they all seemed to have the major ingredients in common. Well, I like different and decided to add mushroom soup and throw in some sauted onions as well. Walla! I'll be making it this way from now on. Yummy × 10. 😛

So I looked through here for a scalloped potatoe recipie and they all seemed to have the major ingredients in common. Well, I like different and decided to add mushroom soup and throw in some sauted onions as well. Walla! I'll be making it this way from now on. Yummy × 10. 😛
Cooking Instructions

In a saute pan, cook onion in butter till they start to separate and are tender and translucent and set side in a bowl. Season to taste. Place half the sliced potatoes in a greased 1 quart dish.

Add butter in a pan until melted, now add flour, milk and mushroom soup stiring frequently.

Cover with half layer the sauce, half layer of onions and 1 cup of cheese. Repeat layers.

Top with remaining 1 1/2 cup of cheese.

Bake covered at 425°F for 35 minutes. Uncover and bake 30 minutes more or till potatoes are tender. Let stand 5 minutes. Serves 4.

Optional: On the last layer, after the onions, I cut up 2 tbs of extra butter into quarter pieces and place on top of the onions and then add cheese.

This recipe doesn't have any weird flavors or spices. It is just a simple dish, but the end result is absolutely delicious. This recipe makes a lot so if you are making it for a small family you can simply halve the recipe. I also recommend using a pan with high sides just so the sauce doesn't go all over your oven while it is baking. I like to get a foil 9x13 lasagna or roasting pan and put it on a cookie sheet. Really Good Scalloped Potatoes Really Good Scalloped Potatoes
I don't like scalloped potatoes. They're usually kinda runny, and the potato slices are really thick. But, we had a bag of potatoes laying around and fashioned them into this nice New Years side dish to go with a big steak. By far my favorite scalloped potatoes. I used comté for this which is a French semi-hard cow's milk cheese. You can substitute gruyère for comté, or use any cheese you like really, I just recommend this one because it works well, melts nicely, and just a little bit on the sweet side. Ryan Goodwin
