Rava idli is a variation of popular South Indian breakfast item, easy to make and easy to digest, a healthy version.

Soak Rava in curd, add water, mix well and rest for 15-20 mins. Heat ghee in a wok, crackle mustard seed, urad dal, then add green chilli, chopped curry leaves and chopped cashews nuts. Mix and add the seasoning to the soaked Rava. Mix well.

Add coriander leaves and grated carrots if reqd, I have not used. It's optional. Now grease idli mould. Before putting the batter in the mould, add baking soda and eno fruit salt and mix well again. It will become little fluffy. Now transfer in the moulds and steam it for 10-12 mins. Remove from mould when cooled. Soft idli, serve with coconut chutney.
