Ingredients

  • 500 gmsMutton chap
  • 200 gmsCurd
  • 1 tablespoonKasuri methi
  • 1/2 teaspoonBlack pepper powder
  • 1 teaspoonGaram masala powder
  • 1 teaspoonChat masala powder
  • 1lemon juice
  • as per tasteSalt
  • 4green chillies
  • 1 inch pieceGinger
  • 4 clovesGarlic
  • half bunchCoriander leaves
  • 5Cardamoms
  • Cloves5
  • 1 cupOil
  • 1 teaspoonDesi ghee
  • 1Coal
  • 1 teaspoonGinger garlic paste

Steps

  1. 1

    In pressure cooker add washed Mutton along with ginger garlic paste add 1 or 2 cup of water and pressure cooked till meat become soft and tender.

  2. 2

    Once Mutton cooked and become soft Remove it from a water and keep a side so it's cool down.

  3. 3

    Make a smooth paste of onion, green chilli, coriander, ginger and garlic.

  4. 4

    In a bowl add Mutton chap, chat masala, garam masala, salt, kasuri methi, black pepper powder mix it well.

  5. 5

    Now add paste (Coriander, green chilli, onion, ginger garlic) & curd mix and coat all the chap well.

  6. 6

    Now add lime juice mix and keep a side for 30 minutes.

  7. 7

    Heat oil in a wok and put chaap pieces in it.

  8. 8

    Filp it and Fry chaap from all sides in a golden brown colour when all pieces fry keep aside.

  9. 9

    In a remaining oil add 3 cardamoms and cloves.

  10. 10

    Now add remaining mixture of masala saute well until oil separates.

  11. 11

    Now add chaap pieces and 1 cup of water now cooked it on highflame until oil separates.

  12. 12

    Remove from gas and keep aside.

  13. 13

    Now for smoky flavour burn coal on gas and put it in a steel bowl.

  14. 14

    Now place this bowl on a chap add 2 cardamoms pour desi ghee on a coal and cover the lid immediately.

    Leave it for 10 minutes so the smoke give best authentic flavor after that remove the bowl from Mutton and serve.

    Serve hot.
