Wash mutton and boil with 2cups of water,salt and bay leaves till 50%done.Also add ginger-garlic paste.

Mean while heat 1/4cup ghee and fry onion till pink.

Make paste of whole garam masala shown in picture.

Make paste of onion.Mix powdered spices to curd,blend.

When mutton is half done,take out.Heat remaining ghee and fry mutton pieces till golden.Reserve water of mutton if any,keep aside.

Now add onion paste,garam masala paste and curd-spices mix to the mutton.Stir well.

Add reserve water of mutton,adjust salt.Cover and cook on low flame till 15-20 minutes.Now mutton is soft and ghee is separates from edges.Roghan Josh is ready.Serve with naan.
