Chicken kobiraji is a delicious street food and also found in cafe and coffee houses of Kolkata.It is another form of cutlet where chicken mince is used with onion and other spices and shaped into cutlets.These are dipped in cornflour batter and tossed in breadcrumbs.Then fried and wrapped in an egg nest.

Chicken kobiraji is a delicious street food and also found in cafe and coffee houses of Kolkata.It is another form of cutlet where chicken mince is used with onion and other spices and shaped into cutlets.These are dipped in cornflour batter and tossed in breadcrumbs.Then fried and wrapped in an egg nest.

Wash chicken mince and either make a paste of it or parboil it to eliminate raw taste.Dry up the water.Grind 2 bread slices and mix in chicken.Heat 1 tbsp oil in a non stick pan and add chopped onion.Fry till transparent.Add green chillies,chicken mince,red chilli powder,black pepper powder,garam masala,chopped coriander and salt to taste.Toss all and form a dough.

Take a portion of the mixture and shape into cutlets.Make a batter of cornflour and maida. Dip each cutlet in this batter then roll in breadcrumbs.

Coat all cutlets and let it rest for sometime.Heat oil in a pan and deep fry the cutlets 2 at a time.

For the egg nest beat 2 eggs with little cornflour and pinch of baking powder.When the oil is hot sprinkle egg batter quickly with hand.This will give a net like appearance.Dip the cutlet in the nest and quickly wrap it. Remove from oil and place on a kitchen towel to remove excess oil.Serve with sliced onion,cucumber and tomato and chilli sauce.
